Homemade Granola Bars

These granola bars have to be one of my favourite snacks. They are great for both adults and children and do not have all the added nasties found in shop bought snack bars. They are quick, easy and filling.

  • 2 ½ cups of oats
  • 1/3 cup of honey
  • ¼ cup of unsalted butter
  • ¼ cup of coconut sugar
  • ¼ teaspoon of salt

My favourite fillings:

  • ½ cup of dried cranberries
  • ½ cup of mixed nuts
  • ¼ cup of dark chocolate chips or chunks
  • ¼ cup of seed mix (I love ones with pumpkin seeds)

Feel free to substitute any of the above with your favourites

Combine the honey, butter, sugar, vanilla extract, and salt in a saucepan on a low to medium heat.  Stir occasionally until the butter melts.

Combine oats and chosen fillings in a bowl and add in the melted mixture. Stir until all ingredients are combined and oats are coated.

Transfer the mixture into a 8 x 8 foil lined tray. Use a spoon or spatula to press the mixture down. The harder you press down the better the bards will stick together once cooled.

Place in the fridge for at least 1 hour. Once ready remove the block from the tray and cut into bars.

The bars will store for one 1 week in a container; I usually keep mine in the fridge to help them stay stuck together.
